Coming to “Hà Nội quán”, you will enjoy Hanoi phở with broth simmered for 24 hours from beef bones, served with cooked beef and raw beef. Our phở is authentic Hà Nội phở (north phở) and not southern phở as Parisian restaurants often sell.
Also note that you will not taste the same phở in the north as in the south of the country. Northern phở broth has a mild taste, flavored with beef, onions and toasted ginger. Meanwhile, southern phở broth is high in sugar and also has a richer taste. It is consumed very differently in the north and the south.
